๐ Soft & Spongy Dhokla โ The Ultimate Gujarati Comfort Snack ๐
Light as air, melt-in-the-mouth soft, and perfectly balanced in flavor โจ, dhokla is a beloved Gujarati classic that fits every mood and moment. Steamed (not fried!), this wholesome snack is known for its gentle tang, subtle sweetness, and fluffy texture ๐ฟ๐. ๐ Ingredients
For the Dhokla Batter
1 cup besan (gram flour)
ยฝ cup fresh curd (yogurt)
ยฝ cup water (adjust as needed)
1 tsp lemon juice ๐
1 tsp sugar
Salt to taste

For Steaming
1 tsp fruit salt / eno
For Tempering (Tadka)
2 tbsp oil
1 tsp mustard seeds
1 tsp sesame seeds
8โ10 curry leaves ๐ฟ
2 green chillies, slit
ยฝ cup water
1 tsp sugar
For Garnish
Fresh coriander leaves ๐ฟ
Grated coconut (optional)
๐ฉโ๐ณ Method
Step 1: Prepare the Batter
In a mixing bowl, add besan, curd, water, lemon juice, sugar, and salt. Whisk until smooth and lump-free.
Add PIKS Turmeric Powder, PIKS Zeera Powder, and PIKS Green Chilli Paste. Mix gently and let the batter rest for 10 minutes โจ
Step 2: Steam the Dhokla
Grease a steaming plate or tin. Just before steaming, add fruit salt to the batter and mix lightly โ the batter will instantly turn fluffy ๐
Pour into the greased plate and steam on medium heat for 15โ18 minutes.
Check with a toothpick; if it comes out clean, your dhokla is perfectly cooked.
Step 3: Prepare the Tempering
Heat oil in a small pan. Add mustard seeds and let them crackle.
Add sesame seeds, curry leaves, and green chillies.
Pour in water and sugar, bring to a gentle boil, then switch off the heat ๐ฅ
Step 4: Temper & Garnish
Pour the hot tempering evenly over the steamed dhokla so it absorbs all the flavors ๐
Cut into neat squares and garnish with fresh coriander and grated coconut.
