๐ Ingredients
๐ฅฃ For Idli Batter
2 cups idli rice
1 cup urad dal (split & skinless)
ยฝ tsp fenugreek seeds
Salt to taste
๐ฒ For Sambar
Main Ingredients
ยฝ cup toor dal
2ยฝ cups water
1 cup mixed vegetables (carrot ๐ฅ, drumstick, pumpkin, beans, onion)
1 tomato, chopped ๐
Salt to taste

2 tsp PIKS Sambar Powder
ยฝ tsp PIKS Turmeric Powder
ยฝ tsp PIKS Red Chilli Powder (optional ๐ถ๏ธ)
Tempering (Tadka)
2 tbsp oil or ghee
1 tsp mustard seeds
1 tsp cumin seeds
1 dried red chilli ๐ถ๏ธ
10โ12 curry leaves ๐ฟ
A pinch of hing (asafoetida)
๐ฅฅ For Coconut Chutney
Ingredients
1 cup fresh grated coconut ๐ฅฅ
2 tbsp roasted chana dal
1 green chilli ๐ถ๏ธ
1 small garlic clove (optional)
Salt to taste
Water as needed

Chutney Tempering
1 tsp oil
ยฝ tsp mustard seeds
6โ8 curry leaves ๐ฟ
1 dried red chilli
๐ฉโ๐ณ Method
๐ฅ Step 1: Prepare Idli Batter
Wash and soak rice, urad dal, and fenugreek separately for 4โ5 hours.
Grind urad dal to a fluffy batter and rice to a smooth batter.
Mix both, add salt, cover, and ferment overnight until airy โจ๐
โจ๏ธ Step 2: Steam the Idlis
Grease idli moulds and pour batter.
Steam for 10โ12 minutes until soft and spongy ๐
Rest for 2 minutes, then demould gently.
๐ฒ Step 3: Cook the Sambar
Pressure cook toor dal with turmeric until soft. Mash well.
Cook vegetables and tomato with water and salt until tender.
Add mashed dal, PIKS Sambar Powder, and PIKS Red Chilli Powder ๐ถ๏ธโจ
Simmer for 8โ10 minutes until aromatic.

Heat oil/ghee, add mustard seeds, cumin seeds, dried red chilli, curry leaves, and hing ๐ฟ
Pour over sambar and mix well ๐
๐ฅฅ Step 5: Prepare Coconut Chutney
Blend coconut, roasted chana dal, green chilli, garlic, salt, water, and PIKS Black Pepper Powder until smooth ๐ฅฅโจ
๐ฅ Step 6: Temper the Chutney
Heat oil, add mustard seeds, curry leaves, and dried red chilli.
Pour over chutney and mix gently ๐ฟ๐ฅ
