๐๐ฒ Idli Sambar โ A Timeless South Indian Comfort Classic ๐ฟโจ
Soft, fluffy idlis paired with hot, aromatic sambar is more than just a meal โ itโs pure comfort โค๏ธ๐. ๐ Ingredients
For Idli Batter
2 cups idli rice
1 cup urad dal (split, skinless)
ยฝ tsp fenugreek seeds
Salt to taste
For Sambar
ยฝ cup toor dal (pigeon pea lentils)
2ยฝ cups water
1 cup mixed vegetables (carrot ๐ฅ, drumstick, pumpkin, beans, onion)
1 medium tomato, chopped ๐
Salt to taste

2 tsp PIKS Sambar Powder
ยฝ tsp PIKS Turmeric Powder
ยฝ tsp PIKS Red Chilli Powder (optional ๐ถ๏ธ)
For Tempering (Tadka)
2 tbsp oil or ghee
1 tsp mustard seeds
1 tsp cumin seeds
1 dried red chilli ๐ถ๏ธ
10โ12 curry leaves ๐ฟ
A pinch of asafoetida (hing)
For Garnish
Fresh coriander leaves ๐ฟ
๐ฉโ๐ณ Method
Step 1: Prepare the Idli Batter
Wash and soak idli rice and urad dal separately for 4โ5 hours.
Grind urad dal to a fluffy batter and rice to a smooth batter.
Mix both with salt, cover, and ferment overnight until airy and risen โจ๐
Step 2: Steam the Idlis
Grease idli moulds and pour batter into them.
Steam for 10โ12 minutes until soft and spongy.
Rest for 2 minutes, then demould gently ๐
Step 3: Cook the Sambar Dal
Pressure cook toor dal with turmeric and water until soft ๐ฒ.
Mash well and keep aside.
Step 4: Prepare the Vegetable Base
In a pot, cook vegetables and tomatoes with water and salt until tender ๐ฅ๐ .
Step 5: Spice It with PIKS
Add cooked dal to vegetables.
Add PIKS Sambar Powder, PIKS Turmeric Powder, and PIKS Red Chilli Powder ๐ฟโจ.
Simmer for 8โ10 minutes until aromatic and well blended.
Step 6: Tempering Magic
Heat oil/ghee in a small pan.
Add mustard seeds, cumin seeds, dried red chilli, curry leaves, and hing ๐ถ๏ธ๐ฟ.
