๐ Ingredients
For the Soup Base
1 tbsp oil
1 tbsp finely chopped garlic
1 tbsp finely chopped ginger
1 green chilli, slit (optional) ๐ถ๏ธ
1 medium onion, sliced ๐ง
Vegetables
ยฝ cup cabbage, shredded
ยฝ cup carrots, julienned ๐ฅ
ยผ cup capsicum, sliced
ยผ cup beans or mushrooms ๐
Spring onions (white part)
Noodles & Liquid
100 g noodles (wheat or eggless) ๐
4 cups vegetable stock or water

Step 1: Cook the Noodles
Boil noodles according to packet instructions ๐.
Drain, rinse with cold water, and keep aside.
Step 2: Prepare the Soup Base
Heat oil in a deep pot.
Add garlic, ginger, green chilli, and onions. Sautรฉ until aromatic and lightly translucent ๐โจ
Step 3: Add Vegetables
Add carrots, beans/mushrooms, capsicum, cabbage, and spring onion whites ๐ฅ๐.
Stir-fry on high heat for 2โ3 minutes to keep veggies crunchy.
Step 4: Build the Broth
Pour in vegetable stock or water ๐ฒ.
Add soy sauce and vinegar. Bring to a gentle boil.
