One bowl, endless flavourโ€”your chilli garlic noodles just got a sizzling upgrade๐Ÿ”ฅ๐Ÿœ

โœจ Ingredients

  • 2 cups noodles (boiled & drained)

  • 1 tbsp oil

  • 1 tbsp finely chopped garlic

  • 2โ€“3 dry red chillies (broken)

  • 1 green chilli (slit)

  • ยฝ cup sliced onions

  • ยฝ cup capsicum strips

  • 1 small carrot, julienned

  • 1 tbsp soy sauce

  • 1 tsp vinegar

  • 1 tsp red chilli sauce

  • ยฝ tsp PIKS Red Chilli Powder

  • ยฝ tsp PIKS White Pepper Powder

  • ยฝ tsp PIKS Chilli Flakes

  • Salt to taste (use PIKS Black Salt for extra flavour)

  • Spring onions for garnish.

๐Ÿ”ฅ Method

1๏ธโƒฃ Prepare the Noodles๐Ÿœ

  • Boil water in a large pot with 1 tsp oil and a little PIKS Black Salt.

  • Add the noodles and cook until just 80โ€“90% done (al dente).

  • Immediately drain them and wash under cold water to stop cooking.

  • Drizzle 1 tsp oil over the noodles, gently mix, and keep aside to prevent sticking.

2๏ธโƒฃ Prepare the Flavour Base (Chilliโ€“Garlic Mix)๐ŸŒฟ

  • Heat 1 tbsp oil in a large wok or kadhai on high flame for that restaurant-style smoky effect.

  • Add 1 tbsp finely chopped garlic and sautรฉ until it turns light golden and aromatic.

  • Add 2โ€“3 dry red chillies (broken) and 1 slit green chilli.

  • Let them sizzle for 10โ€“15 seconds to release heat and flavour.

3๏ธโƒฃ Stir-Fry the Veggies๐Ÿฅ•

  • Add sliced onions and stir-fry for 30โ€“40 seconds.

  • Add capsicum strips and carrots.

  • Cook on high flame for 1โ€“2 minutes only โ€” veggies should stay crunchy to match the classic street-style texture.

4๏ธโƒฃ Add Sauces๐Ÿง‚

  • Add

    • 1 tbsp soy sauce

    • 1 tsp vinegar

    • 1 tsp red chilli sauce

  • Mix for a few seconds so the sauces coat the veggies evenly.

  • Add the cooked noodles to the pan.

  • Using tongs or two forks, gently lift and toss the noodles so the spices coat evenly.

  • Keep flame high to give the noodles a light smoky flavour.

  • Toss for 2โ€“3 minutes until everything is well combined.

7๏ธโƒฃ Finish and Serve๐Ÿœ

  • Add chopped spring onions.

  • Toss once more and switch off the heat.
