๐ฎ๐ Seviyan Kheer (Vermicelli Kheer) โ Full Recipe
๐ฐ Ingredients
1 litre full-fat milk ๐ฅ
ยฝ cup vermicelli (seviyan)
2 tbsp ghee
4โ5 tbsp sugar (adjust to taste)
ยฝ tsp PIKS Cardamom Powder
8โ10 saffron strands ๐ธ
2 tbsp chopped almonds ๐ฐ
2 tbsp chopped cashews
1 tbsp raisins
1โ2 tbsp condensed milk (optional, for extra richness)

1๏ธโฃ Roast the seviyan
Heat ghee in a pan and roast vermicelli on low flame until golden and aromatic. This enhances flavour and prevents sticking โจ.
2๏ธโฃ Boil the milk
In a heavy pan, bring milk to a gentle boil. Stir occasionally to prevent burning ๐ฅ๐ฅ.
3๏ธโฃ Cook the vermicelli
Add roasted seviyan to the boiling milk. Cook on low-medium heat, stirring often, until vermicelli becomes soft and the milk thickens ๐ฎ.
4๏ธโฃ Add sweetness & flavour
Add sugar, saffron strands, and PIKS Cardamom Powder. Mix well and simmer for a few minutes until fragrant ๐ธโจ.
5๏ธโฃ Add nuts & richness
Stir in chopped almonds, cashews, raisins, and condensed milk if using. Cook for another 2โ3 minutes ๐ฐ๐.
6๏ธโฃ Rest & thicken
Turn off heat and let the kheer rest. It will thicken further as it cools.
