๐ฏ๐ Royal Rabri Malpua โ Full Recipe
๐ฅ Ingredients
For Malpua Batter:
1 cup all-purpose flour
ยผ cup semolina (suji)
ยฝ cup khoya (optional, for richness)
1ยฝ cups milk ๐ฅ
2 tbsp sugar
ยฝ tsp PIKS Cardamom Powder
A few strands saffron (optional) ๐ธ
For Sugar Syrup:
1 cup sugar
ยฝ cup water
ยผ tsp PIKS Cardamom Powder
4โ5 saffron strands
For Rabri:
1 litre full-fat milk ๐ฅ
2โ3 tbsp sugar
ยผ tsp PIKS Cardamom Powder
5โ6 chopped pistachios & almonds ๐ฐ
For Frying:
Ghee or oil
๐ฉโ๐ณ Method
1๏ธโฃ Prepare the Rabri
Boil milk in a heavy pan. Simmer on low, stirring occasionally, until it reduces to about half and thickens. Add sugar, PIKS Cardamom Powder, and nuts. Cook until creamy and set aside to cool ๐ฅโจ.
2๏ธโฃ Make the Sugar Syrup
In a pan, combine sugar and water. Boil until slightly sticky (1-string consistency not required). Add PIKS Cardamom Powder and saffron. Keep warm ๐ฏ๐ธ.
3๏ธโฃ Prepare Malpua Batter
Mix flour, semolina, khoya, sugar, PIKS Cardamom Powder, saffron, and milk into a smooth, slightly thick batter. Rest for 15โ20 minutes ๐ฅฃ.

Heat ghee in a shallow pan. Pour a small ladle of batter and gently spread into a small pancake ๐ฅ.
