๐Ÿ‘‘ Rich aroma, perfect texture, and deep masala notes โ€” because your kitchen deserves royal biryani!

๐Ÿฅ˜ Ingredients (Serves 4)

For Chicken Marinade๐Ÿ—

  • Chicken (bone-in) โ€“ 1 kg

  • Thick curd โ€“ 1 cup

  • Ginger-garlic paste โ€“ 2 tbsp

  • Lemon juice โ€“ 1 tbsp

  • Fried onions (birista) โ€“ ยฝ cup

  • Mint leaves (chopped) โ€“ ยฝ cup

  • Coriander leaves (chopped) โ€“ ยฝ cup

  • Green chilies (slit) โ€“ 2

  • PIKS Biryani Masala โ€“ 2 tbsp

  • PIKS Red Chilli Powder โ€“ 1 tsp (adjust to taste)

  • PIKS Turmeric Powder โ€“ ยฝ tsp

  • Salt โ€“ to taste

โžก๏ธ Mix everything well, coat chicken evenly, cover & marinate 2โ€“4 hours (overnight best).

๐Ÿš For Rice

  • Basmati rice โ€“ 3 cups (soaked 30 min)

  • Water โ€“ plenty

  • Bay leaf โ€“ 2

  • Green cardamom โ€“ 4

  • Cloves โ€“ 6

  • Cinnamon โ€“ 1 stick

  • Salt โ€“ enough (water should taste slightly salty)

โžก๏ธ Boil rice till 70% cooked. Drain and keep aside.

๐Ÿณ Cooking the Chicken Masala

  1. Heat ghee + oil (2 tbsp each) in a heavy pan ๐Ÿ”ฅ

  2. Add whole spices (bay leaf, cardamom, cloves, cinnamon)

  3. Add marinated chicken and cook on medium flame

  4. Cook till chicken is 80% done and oil separates

  5. Masala should be thick, rich, and aromatic โœจ

๐Ÿฅ˜ Layering the Biryani

  1. Spread a layer of chicken masala

  2. Add a layer of rice

  3. Sprinkle:

    • Fried onions

    • Mint & coriander

  4. Repeat layers, finishing with rice on top.
