๐ง๐ Paneer Musallam โ Full Recipe
๐ฐ Ingredients
For the gravy base:
250 g paneer (cubed) ๐ง
2 tbsp ghee or oil
2 medium onions (sliced) ๐ง
2 tomatoes (chopped) ๐
10โ12 cashews ๐ฐ
1 tbsp ginger-garlic paste ๐ง
1 bay leaf
2 green cardamoms
1 small cinnamon stick
Spices (PIKS):
ยฝ tsp PIKS Turmeric Powder
1 tsp PIKS Red Chilli Powder ๐ถ๏ธ
1ยฝ tsp PIKS Coriander Powder
ยฝ tsp PIKS Cumin Powder
ยฝ tsp PIKS Garam Masala
ยฝ tsp PIKS Black Pepper Powder
Other:
ยผ cup fresh cream โจ
1 cup warm water
Salt to taste
Fresh coriander for garnish ๐ฟ
๐ฉโ๐ณ Method
1๏ธโฃ Prepare the onion-nut paste
Heat 1 tbsp oil in a pan. Sautรฉ onions until golden. Add cashews and cook for 2 minutes. Cool and blend into a smooth paste ๐ฅฃ๐ฐ.
2๏ธโฃ Cook the tomato base
In the same pan, sautรฉ chopped tomatoes until soft and mushy. Blend into a smooth purรฉe ๐
โจ.
3๏ธโฃ Build the flavour base
Heat ghee in a heavy pan. Add bay leaf, cardamom, and cinnamon. Let them release their aroma ๐ฟ๐ฅ.
4๏ธโฃ Add ginger-garlic paste
Sautรฉ until fragrant. Add the onion-cashew paste and cook until thick and slightly glossy.
5๏ธโฃ Add PIKS spices
Lower the flame and add PIKS Turmeric, Red Chilli, Coriander, Cumin Powder, and Black Pepper. Cook gently to deepen the flavour ๐ถ๏ธโจ.
6๏ธโฃ Combine tomato purรฉe
Add blended tomato purรฉe and cook until the gravy thickens and oil begins to separate.
7๏ธโฃ Add paneer & simmer
Gently add paneer cubes and warm water. Cover and simmer for 5โ7 minutes so paneer absorbs the rich flavours ๐ง๐.
8๏ธโฃ Finish royal style
Stir in fresh cream and sprinkle PIKS Garam Masala. Simmer for 2 more minutes until velvety and smooth ๐โจ.

Garnish with coriander and a drizzle of cream ๐ฟ.
