Made with soft flattened rice, sautรฉed onions, crunchy peanuts, and perfectly seasoned with PIKS spices, this simple dish turns into a comforting and nutritious meal. Vegan, gluten-free, and ready in minutes, Poha is ideal for busy mornings or a light evening snack ๐๐ฅ. A squeeze of lemon and fresh coriander at the end makes it absolutely irresistible!
๐ฅฃ๐ฟ Kanda Poha (Maharashtrian Style) โ Full Recipe
๐ฅ Ingredients
2 cups thick poha (flattened rice)
1 medium onion (finely chopped) ๐ง
2 tbsp peanuts ๐ฅ
2 tbsp oil
ยฝ tsp mustard seeds
ยฝ tsp PIKS Cumin Seeds
8โ10 curry leaves ๐ฟ
1โ2 green chillies (chopped) ๐ถ๏ธ
ยฝ tsp PIKS Turmeric Powder
ยฝ tsp PIKS Red Chilli Powder (optional)
Salt to taste
1 tsp sugar (optional, traditional touch)
1 tbsp fresh lemon juice ๐
Fresh coriander leaves (chopped) ๐ฟ
๐ฉโ๐ณ Method
1๏ธโฃ Prepare the poha
Rinse poha gently under running water in a strainer. Do not soak. Let it sit for 5 minutes until soft and fluffy โจ.
2๏ธโฃ Roast the peanuts
Heat oil in a pan. Fry peanuts until golden and crunchy. Remove and set aside ๐ฅ๐ฅ.
3๏ธโฃ Tempering
In the same pan, add mustard seeds. Once they splutter, add PIKS Cumin Seeds, curry leaves, and green chillies ๐ฟ๐ถ๏ธ.
4๏ธโฃ Cook the onions
Add chopped onions and sautรฉ until soft and translucent ๐ง

Lower the flame and add PIKS Turmeric Powder, Red Chilli Powder, salt, and sugar. Mix well to coat evenly ๐ถ๏ธ๐.

Add softened poha and roasted peanuts. Mix gently so the poha doesnโt break. Cook for 2โ3 minutes on low heat.
7๏ธโฃ Finish fresh
Turn off the flame. Add lemon juice and fresh coriander. Mix lightly ๐๐ฟ.
