๐ฅฃ๐ฟ Gatte Ki Sabji (Rajasthani Style) โ Full Recipe
๐พ Ingredients
For besan gatte (dumplings):
1 cup besan (gram flour)
2 tbsp yogurt
ยฝ tsp PIKS Turmeric Powder
1 tsp PIKS Red Chilli Powder ๐ถ๏ธ
ยฝ tsp PIKS Coriander Powder
ยฝ tsp PIKS Cumin Powder
1 tbsp oil
Salt to taste
Water (as needed to knead)
For the yogurt gravy:
1 cup yogurt (well whisked) ๐ฅ
2 tbsp oil or ghee
ยฝ tsp mustard seeds
ยฝ tsp PIKS Cumin Seeds
1 pinch hing
1 tsp PIKS Coriander Powder
ยฝ tsp PIKS Red Chilli Powder
ยผ tsp PIKS Turmeric Powder
ยฝ tsp PIKS Garam Masala
Salt to taste
1ยฝ cups water
For garnish:
Fresh coriander leaves ๐ฟ
๐ฉโ๐ณ Method
1๏ธโฃ Prepare the gatte dough
In a bowl, mix besan, yogurt, PIKS Turmeric, Red Chilli Powder, Coriander Powder, Cumin Powder, oil, and salt ๐ถ๏ธ.
Knead into a firm dough using very little water.
2๏ธโฃ Shape and boil
Divide dough into long cylindrical rolls. Boil them in water for 8โ10 minutes until firm. Remove, cool slightly, and cut into small pieces ๐ฅฃโจ.
3๏ธโฃ Prepare the gravy base
Heat oil or ghee in a pan. Add mustard seeds, PIKS Cumin Seeds, and hing. Let them splutter ๐ฟ๐ฅ.

Lower flame and add PIKS Turmeric, Red Chilli Powder, and Coriander Powder. Stir briefly.

Add the boiled besan dumplings and cook on low heat for 10 minutes so they absorb the flavours ๐.
