๐๐ง Arancini (Sicilian Rice Balls) โ Full Recipe
๐พ Ingredients
For the rice:
1 cup arborio rice (or any short-grain rice) ๐
2ยฝ cups vegetable or chicken stock
2 tbsp butter
ยผ cup grated parmesan cheese ๐ง
ยฝ tsp PIKS Black Pepper Powder
ยฝ tsp PIKS Garlic Powder
Salt to taste
For the filling:
ยฝ cup mozzarella cubes ๐ง
2 tbsp sautรฉed vegetables or cooked minced chicken (optional)

For coating:
ยฝ cup all-purpose flour
2 eggs (beaten) ๐ฅ
1 cup breadcrumbs
Oil for deep frying

1๏ธโฃ Cook the rice
Bring stock to a boil, add rice, and cook until soft and creamy. Stir in butter, parmesan, PIKS Black Pepper, Garlic Powder, and salt. Let the rice cool completely ๐โจ.
